Roy’s Light Chicken in Black Bean Sauce

Ingredients

· Cooking spray

· 1 (15 oz) cans black beans, drained and rinsed

· 1 small or 1/2 medium onion, diced, divided

· 1 small or 1/2 medium  green pepper, diced, divided

· 2 tsp hot sauce, optional (see notes)

· 1 1/2 tsp lime juice

· 1 1/2 tsp chili powder

· 1 tsp salt, divided

· 1/2 tsp ground cumin

· 1/2 tsp garlic powder

· 1/2 tsp onion powder

· 1/2 tsp black pepper, divided

· 1 cup chicken broth (see notes)

· 1 Tbsp minced garlic

· 1 lb chicken breast, cut into bite-sized pieces (see notes)

· 1 cup frozen corn, thawed (see notes)

 

Directions

1. In a blender or food processor, process drained black beans, 1/4 of the diced onion, 1/4 of the diced green pepper, hot sauce (if using), chili powder, cumin, 3/4 tsp salt, garlic powder, onion powder, and 1/4 tsp pepper. Add broth and process until smooth.

 

2. Season the chicken pieces with the remaining salt and pepper. Heat a large nonstick skillet over medium-high heat. Once hot, coat the skillet with cooking spray and add in the chicken pieces. Cook, undisturbed, for 3-4 minutes to get some color. Flip the chicken and cook another 3-4 minutes. Transfer to a plate.

 

3. Coat the skillet once more with cooking spray and add the remaining onion and pepper. Sauté until softened, about 5 minutes. Stir in the minced garlic, cooking until fragrant, about 30 seconds. Add in the thawed corn and cook another 2-3 minutes. Add the cooked chicken back in, along with any juices accumulated, and stir everything through.

 

4. Pour in the black bean sauce slowly to minimize splattering. Stir everything together and cook until the sauce is slightly thickened, 5-6 minutes. Serve over rice, cauliflower rice, potatoes, pasta, or even eggs! Or use it in tacos, burritos, or however you wish.

 

Notes

· Use any hot sauce you like. Or you can swap out the hot sauce for a teaspoon or two of cayenne, red pepper flakes, or any spicy seasoning.

· Vegetable or even beef broth are also options here.

· Swap chicken for center-cut pork or pork tenderloin, though this will add bites/points.

· Eliminate the corn if you wish to lower the carbs. You can replace it with other frozen or even canned veggies as well. Or fresh, but fresh should be cooked beforehand.
