Roy’s Light Slow-Cooker Peach BBQ Chicken

Ingredients

· 1 small onion, sliced (see notes)

· 1 1/2 lb boneless, skinless chicken breast, about 2 medium breasts

· 1 tsp of chili powder

· 3/4 tsp salt

· 1/2 tsp paprika

· 1/2 tsp thyme

· 1/4 tsp black pepper

· 1/4 tsp garlic powder

· 1/4 tsp onion powder

· 1/4 tsp cumin

· 2 ripe peaches, peeled and diced (see notes)

· 3/4 cup low-bite/point BBQ sauce (see notes)

· 1/3 cup chicken broth

· 1 Tbs minced garlic OR 3 cloves of garlic, minced

· 2 tsp Worcestershire sauce

· 1 tsp spicy brown mustard (see notes)

· Salt, to taste


Preparation

1. Lay the sliced onions on the bottom of the slow cooker, then lay the chicken on top of them.


2. Sprinkle the chili powder, salt, paprika, thyme, black pepper, garlic powder, onion powder, and cumin over the breasts. (see notes)


3. Scatter the peaches over the seasoned chicken, then pour over the bbq sauce, chicken broth, garlic, Worcestershire sauce, and mustard.


4. Cook on Low 6-8 hours or on High 3-4 hours.


5. Remove the chicken from the sauce, shred it using two forks, then add the meat back in the sauce. Adjust the salt to taste and enjoy over rice, on a bun, or however you’d like to use it!


Notes

· It is best to slice the onion from root to stem rather than across because they will become more tender.

· You can sub out the fresh peaches for frozen or canned in juice (not syrup, and drained).

· I use my Light Root Beer BBQ Sauce or G Hughes BBQ sauces. You can use whatever you enjoy.

· I prefer the flavor of the spicy brown mustard, but you can use any style you like.

· If you have any steak seasoning on hand, you can replace the salt and all the spices AFTER IT for 1 Tbsp of the steak seasoning. Do NOT omit the chili powder!

· Feel free to add in some frozen veggies if you’d like to bulk up the dish. If you want to add fresh, I would not add them until the last hour or so of cooking.

· If, after adding the chicken, you’d like the sauce a little thicker (say for sandwiches), you can mix 1 tsp of cornstarch with 2 tsp of COLD water and stir it in--with the slow cooker still on--to aid in thickening.
