Ingredients
· Cooking spray
· 1 small onion, grated
· 2 tsp minced garlic or 2 cloves, minced or grated
· 12 oz. can (1 ½ cups) diet root beer (see notes)
· 15 ounces tomato puree, tomato sauce, or crushed tomatoes (see notes)
· 1/3 cup packed brown sugar replacement (see notes)
· 3 tablespoons Worcestershire sauce
· 1 Tbsp spicy brown mustard (see notes)
· 1/2 teaspoon salt
· 1/4 teaspoon pepper
· 1/4 tsp ground cloves
Instructions
1. Spray a medium saucepan and set over medium heat.
2. Add the grated onion. (You can grate it directly into the pan as it heats.) Cook until the onion starts to brown, stirring occasionally, about 5-6 minutes.
3. Add in the remaining ingredients and whisk together until well combined.
4. Cook about 30 minutes, until the mixture has cooked down by half and thickened.
5. Use hot or store in the refrigerator.
Notes
· Feel free to change up the soda flavor, but I would use something with a caramel note, such as cola or Dr. Pepper. Cream might also work well, though it is milder.
· If you use crushed tomatoes, I suggest blending the sauce. You can also blend it anyway if you prefer it smoother.
· If you prefer your sauce a little sweeter, add more brown sugar. If you prefer it less sweet, add less.
· I prefer spicy brown mustard, but any mustard would work.
· If you would like your BBQ sauce to have more of a spicy kick, add in some hot sauce, cayenne, or red pepper flakes to taste.
· For an incredibly easy baked bean recipe: In a medium saucepan, add a 28 oz can of pinto (or other small) beans, drained and lightly rinsed, and 1/2 cup of the sauce and set over medium heat. Once it begins to bubble, cook about 5 minutes, stirring occasionally. Serve hot! (This will make 4 servings at 0 bites/blue points!)
· Mix with some shredded chicken breast or low-bite/low-point pork and use on a sandwich or pizza.
