Roy’s Light Blueberry Cream Cheese Crumb Bars

Ingredients

· Cooking spray

· 1/2 cup canned pumpkin (NOT pumpkin pie filling!)

· 1 pkg. sugar-free yellow cake mix

· 2 eggs, divided

· 2/3 cup sugar replacement

· 1 Tbsp lemon zest

· 3 Tbsp. lemon juice

· 2-1/2 cups fresh blueberries


Directions

1. Heat oven to 350ºF. Spray a 13x9-inch pan with cooking spray. You can add a “sling” made of parchment or foil for easier removal from the pan, but it isn’t necessary.


2. In a large bowl, beat together the pumpkin and 1 egg! Add the cake mix until blended. It will look like it is just going to remain crumbly, but it will come together.


3. Using damp hands, press 2/3 of the dough onto the bottom of the prepared pan. The dough will be sticky and the water helps keep it from clinging to your hands.


4. Put the drained Greek yogurt (OR fat-free cream cheese) and sugar replacement into a medium bowl and mix until fluffy and blended. Add the remaining egg, zest, and juice and mix well.


5. Pour over the cream cheese mixture over the crust, spreading it evenly. Scatter the berries over the top and spread evenly.


6. Take the remaining dough and pinch small pieces off and scatter them evenly over the berries, but it is not expected to cover the whole surface. Press the small balls of dough gently into the cream cheese/blueberry layer.


7. Bake 45 - 50 min. or until a toothpick inserted in the center comes out clean.


8. Cool completely. Cut into bars. If using the "sling," remove the bars from the pan first. For best results, refrigerate the cooled dessert.



Notes:

· You can use any flavor cake mix you like. Play around with different flavors and different fruits! Chocolate cake would work well with cut strawberries or cherries!

· You can also change out the lemon for other citrus fruits based on your desired flavors! Orange would be delicious with chocolate cake and strawberries. Lime would be nice with yellow or even spice cakes and cherries.

· As stated above, you can play around with the fruits used, but either stick to “softer” fruits like berries, cherries, or grapes OR precook harder fruits like apples or pears.

· If you want to cut this into 16 servings, they will be 3 bites each. If you want to cut this into 20 servings, they will be 2 bites each.
