Roy’s Light Apple Crisp Cheesecake

Ingredients

· Cooking spray

· 1 Granny Smith apple (see notes)

· 1 teaspoon lemon juice

· 2 sheets (8 crackers) graham crackers, crushed (see notes)

· 1/3 cup quick-cooking oats (see notes)

· 1/2 cup + 3 Tbsp sugar replacement, divided

· 1/2 teaspoon ground cinnamon

· 2 eggs, room temperature

· 3 Tbsp flour

· 1 teaspoon vanilla extract

· I Can’t Believe It’s Not Butter Spray (other choices could affect points)


Directions

1. Preheat oven to 375° F. Heavily coat a 9” pie pan with cooking spray.


2. Peel, core, and thinly slice (about 1/4 inch) the apple. In a small bowl, toss the apple slices in the lemon juice to stop them from browning and set aside.


3. In another small bowl, combine the oats and graham cracker crumbles. Set aside.


4. In another small bowl, whisk 3 Tbsp sugar replacement and cinnamon. Set aside.


5. In a medium bowl, beat cream cheese, 1/2 cup sugar replacement, eggs, flour, and vanilla with an electric mixer until smooth, about 30 seconds. Pour into prepared pie pan and spread into an even layer.


6. Layer the apple slices on top of the cream cheese mixture. You can do this in a pattern or simply pour them and evenly spread them. Sprinkle cinnamon-sugar mixture on top of the apples, then sprinkle the oat/graham mixture on top of the cinnamon. Spray the oat/graham mixture with butter spray.


7. Bake in the preheated oven 35-40 minutes, until the center is about level with the cooked edges. (see notes) Check after 20 minutes (and every five or so minutes after) and, if the oat/graham mixture starts to get too dark, cover loosely with foil.


8. Cool on a wire rack at least an hour, then refrigerate until completely set, 2-3 hours.


Notes

· You can use any apple you like, but it should be medium-large in size.

· Not in the mood for apples? Replace them with the fruit of your choice. If using berries or cherries, I suggest using 1 – 1 1/2 cups worth.

· You can replace the graham crackers with vanilla wafers, tea biscuits, or any other such cookie. Just be aware it may affect bites/points.

· If you don’t have or don’t want to buy quick-cooking oats, simply chop old-fashioned oatmeal with a knife. I don’t recommend a food processor since it chops it too finely.

· As the cheesecake bakes, the edges will rise and set first, leaving the center looking a bit crater-like. As the cheesecake continues to bake, the center will rise to become about level with the edges. That’s when you’ll know it’s done.
