Ingredients
· 1 pound chicken breasts
· 2 Tbsp cornstarch
· 1 Tbsp oil, divided
· Cooking spray
· 1/3 cup whiskey (can use scotch or bourbon)
· 1/3 cup low-sodium soy sauce
· 1/2 cup chicken broth
· 1/3 cup brown sugar replacement
· 1/2 tsp ground ginger
· 1/2 tsp onion powder
· 1/4 tsp red pepper flakes
· 4 garlic cloves, minced
· 3 cups broccoli florets
· 3 green onions chopped thinly for garnish, optional
Instructions
1. Mix the whiskey, soy sauce, broth, brown sugar replacement, and the spices in a bowl, then set aside.
2. Cut the chicken breasts in half lengthwise, then into half-inch-thick strips. Place in a bowl and toss with cornstarch to coat.
3. Spray a large skillet (with a lid) with cooking spray and add 1/2 tablespoon of oil, set over medium-high heat. When hot, add the chicken and let cook undisturbed for about 3 minutes. If your pan is too small, do this in 2 batches. After 3 minutes, flip the chicken and let cook undisturbed another 3 minutes.
4. Transfer chicken to a plate and add the rest of the oil to the pan. Add the broccoli and cook undisturbed for about 2 minutes. Add 2 tablespoons of water to the pan and cover. After 2 minutes, remover the lid, stir, and add to the plate with the chicken.
5. Return the pan to the heat and spray with more cooking spray. Add garlic and cook, moving constantly, until fragrant, about 30 seconds.
6. Pour in the sauce and mix, scraping up any browned bits from the pan. Bring to a boil and cook for a minute or two, then add the chicken and broccoli back in and reduce to a simmer. Move the chicken and broccoli to coat and cook until reduced by about half.
7. If serving with pasta or rice, add it to the pan to coat it with sauce.
8. Garnish with sliced green onions, if using, and serve.
