Roy’s Light Tzatziki Sauce

Serves 8 (generous 2 Tbsp) 0 Better Balance Bites/ Blue Points (up to 3 servings!)

Ingredients

· 3/4 cup finely grated cucumber, peeled

· 1 cup nonfat Greek yogurt

· 1 tablespoon lemon juice

· 1 1/2 tsp dried dill OR 1 tablespoon fresh dill, finely chopped

· 1 tsp olive oil

· 1 tsp minced garlic (OR 1 clove grated)

· 1/4 tsp salt


Instructions

1. Place the grated cucumber on a clean tea towel and squeeze out a good amount of excess water.


2. In a medium bowl, combine the cucumber, yogurt, lemon juice, dill, oil, garlic, and salt. Chill until ready to use.


Notes

· Use it with raw or grilled veggies, sandwiches, burgers, pretzels, and more.

· Easy Tzatziki Hummus: Rinse and drain a 15 oz can of chickpeas and add it along with 2/3 cup Roy’s Light Tzatziki Sauce, 2 Tbsp water, and 1/2 tsp salt to a food processor. Process until you get a creamy hummus consistency. If too thick, add a bit more water.
