Roy’s Light Tiramisu Baked Oatmeal for One

Ingredients

· Cooking spray

· 1 egg, room temperature

· 1/3 cup room-temperature coffee

· 1 Tbsp almond milk, room temperature

· 1 Tbsp sugar replacement

· 1 tsp unsweetened cocoa powder

· 1/4 tsp vanilla

· 1/3 cup old-fashioned oats

Topping

· 3 Tbsp plain nonfat Greek yogurt, room temperature

· 1 tsp sugar-free vanilla or white chocolate pudding mix

· Splash of vanilla

· Sprinkle of unsweetened cocoa powder, optional


Directions

1. Coat a 12 oz (or so) mug or ramekin with cooking spray.


2. In a small bowl, beat the egg, coffee, almond milk, sugar replacement, cocoa powder, and vanilla until uniform. Mix in the oatmeal and let sit for 2 minutes to hydrate the oatmeal.


3. Pour the oatmeal into the prepared mug or ramekin. Microwave 2-3 minutes, until set to your desired consistency. Allow to cool slightly while making the topping.


4. Mix together the yogurt, pudding mix, and vanilla until the yogurt has thickened. Spread evenly over the oatmeal. If desired, sprinkle a little cocoa powder on top.


Notes

· While things will incorporate more easily if everything is at room temperature, if you’re in a hurry, you can make this with cold items and a little extra mixing.
