Roy’s Light Summer Berry Clafoutis

Ingredients

  • Cooking spray

  • 2 cups of mixed berries, cherries, or any larger fruit cut into small pieces

  • 3 large eggs

  • 1/2 cup sugar replacement

  • 1 tablespoon vanilla

  • 1/2 teaspoon salt

  • 1/2 cup flour

  • 1 1/4 cup almond milk

  • 1 teaspoon powdered sugar, optional (or powdered sugar replacement)

Directions

  1. Preheat the oven to 350 F. Generously coat a 9” pie pan with cooking spray.

  2. Spread the fruit in a single layer in the prepared pie pan.

  3. In a medium bowl, whisk the eggs until homogenous, about 1 minute, then add in the sugar replacement, vanilla, and salt, and whisk another minute until well combined.

  4. Add in the flour and whisk until the batter is smooth.

  5. Pour in the almond milk as you continue to whisk until it is thoroughly blended, then pour the batter over the fruit in the pan. Shake gently to allow any bubbles to come to the surface, then pop any large ones with a spoon, fork, or even a paper towel.

  6. Bake for 45-55 minutes, until it's puffed up, lightly browned, and a toothpick inserted in the center comes out clean.

  7. Remove the clafoutis from the oven to a cooling rack and allow it to cool at least 10 minutes.(It will shrink somewhat as it cools.)

  8. Before serving, dust with powdered sugar. Serve the clafoutis warm, at room temperature, or cold.

Notes

  • You can make this into 8 servings and the bites/points won’t change, but the calories and macros obviously will.

  • You could use a cake pan but will not turn it out like a cake. Just cut it in the pan.

  • You can use an 8” pie plate or cake pan but will likely need to bake it a little longer.
