Ingredients
· 2 egg whites, room temperature – do NOT use processed egg whites from a carton
· 1/8 tsp cream of tartar
· 1/8 tsp salt
· 1/2 cup granular sugar replacement
· 10 sugar-free peppermint candies, crushed
Instructions
1. Preheat oven to 225°F. Line a baking sheet with parchment paper.
2. In a very clean large bowl, combine together the egg whites, cream of tartar, and salt. With an electric mixer (or in a stand mixer with the whisk attachment) beat on high until it appears foamy and forms soft peaks when the beaters are lifted.
3. Gradually add in the sugar replacement as you continue to beat the egg whites until stiff peaks form, meaning the meringue points stand up when you lift the beaters instead of drooping.
4. Use a tablespoon, a piping bag outfitted with a star tip, or a plastic zip-top bag with a corner cut off to form 20 cookies on the prepared baking sheet. Make sure to leave room between the cookies. Sprinkle the crushed peppermints evenly over the top of the meringues.
5. Bake these cookies for about an hour or until the cookies begin to brown slightly along the bottom edge. Turn off the oven. Keep the oven door slightly open and let meringues sit in the oven until completely cool. This can take from one hour to up to eight hours depending on how crisp you like your meringue cookies.
6. Gently remove the cookies from the parchment. Store covered in a cool, dry place for up to 2 months.
Notes
· Use a sugar alternative that is granular and measures 1:1 with sugar for best results.
· For a 'fluffier' result, try using a sugar-free powdered sugar blended in with or instead of the granular alternative.
· You MUST use a clean bowl and beaters (or whisk attachment) to make this recipe. Any fats or oils that are on the bowl or beaters will keep the whites from getting to the right state.
