Roy’s Light Red Pepper Feta Dip

Serves 12 (2 Tbsp) 0 Better Balance Bites/Blue Points (1-6 servings! 1 bite/point for it all!)

Ingredients

· 8 ounces crumbled fat-free feta cheese

· 1/2 cup roasted red peppers

· 1/4 cup plain nonfat Greek yogurt (see notes)

· 2 Tbsp fresh parsley OR 1 Tbsp dried

· 1 Tbsp lemon juice


Directions

1. Add everything to the bowl of a food processor or blender. (See note)


2. Blend until the mixture creates a thick, creamy texture with small bits of feta.


3. Spoon into a serving bowl and serve alongside toasted pita, fresh veggies, or whatever you’d like.


Notes

· If you prefer this dip thicker, replace the yogurt with Roy’s Light Homemade Cream Cheese or simply add some with the yogurt.

· This dip is versatile! Try it on a sandwich or Greek chicken burger! Add it to rice, veggies, or pasta! Mix it into your scrambled eggs before cooking!
