Roy’s Light Pumpkin Pie Dip

This makes about 3 cups of dip and each serving is about 2 1/2 Tbsp.

 

Ingredients

· 1 1/2 cups plain nonfat Greek yogurt

· 1 (1 oz) pkg of sugar-free instant butterscotch pudding mix (see notes)

· 1/2 cup pumpkin puree (NOT pumpkin pie MIX)

· 1 1/2 tsp pumpkin pie spice

· 1 (8 oz) container fat-free whipped topping, thawed (see notes)

 

Directions

1. With a hand mixer, combine the yogurt and pudding mix in a medium bowl. Once well blended, mix in the pumpkin puree and pie spice, followed by the whipped topping. Serve with apple slices, marshmallows, pretzels, graham crackers, lady fingers, vanilla wafers, etc.

 

Notes

· You can use vanilla or cheesecake sugar-free instant pudding mix, but the caramel notes in the butterscotch enhance the pumpkin pie flavor.

· Can’t find fat-free whipped topping? Sugar-free works, but may slightly affect the bites/points.
