Roy’s Light Sweet Potato Pie

Ingredients

· Cooking spray

· 1 cup cooked, mashed sweet potato

· 1/2 cup cooked, mashed carrots

· 3 eggs

· 1/2 cup almond milk

· 1/4 cup Swerve brown sugar substitute

· 1 tsp. vanilla extract

· 1/2 tsp ground cinnamon

· 1/2 tsp ground nutmeg

· 1/4 tsp ground ginger

· 1/4 tsp salt



Directions

1. Preheat oven to 400 degrees. Spray pie pan with cooking spray.


2. In a bowl, mix together all the ingredients thoroughly. Pour into the prepared pie plate.


3. Bake 15 minutes. Turn oven down to 375 degrees and bake another 30-40 minutes, until the edges are set and look dry. The center will be firm, but not dry.


4. Allow to cool completely. Serve with whipped cream or ice cream.
