Roy’s Light Pumpkin Caramel Bars

Ingredients

· Baking or cooking spray

For the Batter

· 1 1/2 cups all-purpose flour

· 1/2 cup (64 grams) scoops of vanilla protein powder (can be replaced with flour!)

· 1 teaspoon baking soda

· 1 teaspoon baking powder

· 3/4 teaspoon salt

· 1 Tbsp pumpkin pie spice

· 3 large eggs

· 3/4 cup brown sugar replacement

· 1/2 cup white sugar replacement

· 1/4 cup almond milk

· 15 oz can of pumpkin puree

· 2/3 cup unsweetened applesauce

· 2 teaspoon vanilla extract

For the Caramel Frosting

· 8 oz cream cheese, room temp

· A scant 1/2 cup (145 grams) of Smucker’s No Sugar Added Caramel Sauce


Instructions

1. Preheat oven to 350°F and spray a 9x13 baking pan with baking/cooking spray OR line it with parchment paper.


2. Combine the flour, protein powder, baking soda, baking powder, salt, and pumpkin pie spice in a large bowl, whisk together, and set aside.


3. In a separate bowl combine the eggs, white and brown sugar replacements, milk, pumpkin puree, applesauce, and vanilla. Whisk together until smooth.


4. Pour the wet mixture into the dry and mix using a spatula until just combined. Do NOT overmix or the bars will be tough! Transfer the batter to your prepared pan and spread out into an even layer.


5. Bake about 30-35 minutes or until the center springs back when pressed lightly or a toothpick inserted in the center comes out clean.


6. Make the frosting by beating room temperature cream cheese and caramel sauce together until well combined.


7. Once the base is cool cover with the caramel-cream cheese frosting, cut, and serve.


Alternative Toppings:

· You do not need a frosting for these bars. They are delicious plain.

· Add a dusting of powdered sugar or its replacement.

· Top with fat-free whipped cream.


Roy’s Light Coffee Cream Cheese Frosting (for Pumpkin Spice Latte Bars)

Ingredients

· 8 oz. Roy’s Light Homemade Cream Cheese, room temperature

· 1 1/2 tablespoons instant coffee or espresso powder dissolved in 2-3 tsp water

· 1 teaspoon vanilla extract

· 1 1/2 to 2 cups powdered sugar replacement, to taste


Directions

1. In a bowl, mix together the cream cheese, dissolved coffee, and vanilla.


2. Add sugar replacement gradually, tasting occasionally to determine your desired sweetness. Mix well to reach desired spreading consistency and flavor.
