Ingredients

· Cooking spray

· 1 small onion, diced (about 3/4 cup)

· 1/2 of a green pepper, diced (about 3/4 cup)

· 1 lb 96% ground beef or chicken or turkey breast

· 1 Tbsp minced garlic

· 1 (15oz can) of petite diced tomatoes

· 1/2 cup water

· 3 Tbsp of brown sugar replacement

· 3 Tbsp chopped pimento-stuffed olives (see notes)

· 2 Tbsp olive brine (juice from the jar)

· 1 tsp of Adobo seasoning OR 1/2 tsp salt, 1/4 tsp paprika, and a generous pinch each onion & garlic powders and black pepper (adjust to your liking)

· 1/2 tsp of Cumin


Preparation

1) Preheat a pot over medium-high heat. Once hot, coat the pot with cooking spray and add the onion and pepper. Sauté until slightly softened and lightly brown, about 2-3 minutes. Push the veggies to the edge of the pot.


2) Coat the pot once more with cooking spray and add the ground meat of your choice, breaking it up as much as possible with a spatula or spoon and allow it to cook until fully cooked through.


3) Add the garlic and stir it through, heating it through for about 30 seconds.


4) Add the remaining ingredients, bring to a boil, then reduce the heat to medium-low, partially cover the pot, and allow to simmer for about half an hour. If it is too watery after the half-hour, remove the lid and continue to cook to the desired consistency.


5) Adjust the seasoning to taste and serve over rice, pasta, cauliflower rice, steamed veggies, or use as a filling for tacos or burritos or as a topping on pizza or nachos.


Notes

· There are different versions of this dish, so change it as you like. Add cubed potatoes, frozen veggies, or a bit of tomato paste.

· You can use 2 Tbsp of plain olives with 1 Tbsp of minced pimentos or roasted red peppers.
