Roy’s Light Peanut Butter-Chocolate Chip Snowballs

Ingredients

· 8 oz tub of fat-free whipped topping, thawed

· 1/4 cup powdered peanut butter

· 28g sugar-free chocolate chips, coarsely chopped (see notes)

 

Directions

1. Place 18 small candy liners into mini muffin cups.

 

2. Whisk together whipped topped and powdered peanut butter. Once well combined, stir in the chocolate chips.

 

3. Portion out into the liners using a scoop. You can insert lollipop sticks (cut in half, if too long) into them before or after freezing. It isn’t necessary but does keep your fingers cleaner.

 

4. Freeze several hours until firm and enjoy!

 

Recipe Notes

· Two of these treats will be 3 bites/points.

· Use any flavored chips you’d like. This was created with milk chocolate chips, but I often make them with white chocolate chips as well. You could also swap out the chips for nuts or even dried fruit!

· Coarsely chopping the chips helps them to spread throughout the snowballs better without needing to add more. But you could add more and keep them whole if desired. Just be aware it will increase the nutrition facts.
