Ingredients
· Cooking spray
· 1/2 cup light butter (I used I Can’t Believe It’s Not Butter Light)
· 2/3 cup sugar replacement
· 2/3 cup brown sugar replacement
· 1 cup all-purpose flour
· 1/2 cup powdered peanut butter (I used PBFit)
· 1/2 tsp. salt
· 1 cup old-fashioned oats
· 1 cup sugar-free jam, any variety
Directions
1. Heat oven to 350°F. Coat 13 x 9-inch baking pan with cooking spray.
2. Beat together the light butter, sugar replacement, and brown sugar replacement in large bowl with a mixer. Start on low speed, then move up to medium-high speed once it’s combined and beat until light and fluffy.
3. Add the flour, powdered peanut butter, and salt and mix on low speed until blended. It will not come together like a dough but will instead form crumbs resembling wet sand. If you squeeze a bit of it, it should stick together in a clump.
4. Add in the oatmeal and mix just to combine.
5. Measure out 1 1/2 cups of the “dough” and set aside. Sprinkle the remaining “dough” into the prepared pan and pack down firmly to form a crust. Bake 12 minutes.
6. Remove pan from the oven. CAREFULLY spoon the jam over the crust and spread evenly. Finely crumble reserved “dough” evenly over the jam layer. Do NOT pack it down!
7. Bake about 30 minutes until topping is golden brown.
8. Cool completely in the pan on a wire rack before cutting into 12 bars.
Note
· If you'd prefer not to use the powdered peanut butter, just replace it with all-purpose flour.
