Roy’s Light Monte Cristo “Omelet” Sandwich

Ingredients

· Cooking spray

· 2 large eggs (see notes)

· 1 tsp Dijon mustard

· 2 slices low-bite/low-point bread (I use Sara lee Delightful 45 or Freihofer’s Reduced Calorie Italian)

· 2 slices fat-free cheese

· 2 thin slices of lunchmeat ham (I used Hillshire Farms Ultra-thin) (see notes)

· 2 thin slices of lunchmeat turkey (I used Hillshire Farms Ultra-thin) (see notes)


Directions

1. Heat a nonstick skillet (at least 10”) over medium-high heat and coat it well with cooking spray.


2. In a small bowl, whisk together the eggs and mustard until well combined.


3. Add the egg mixture to the hot pan. Working quickly, dip the bread slices in the eggs, flip them to coat the other side of the bread, and leave them to cook. The bread slices should have their bottom edges facing each other.


4. Cook the eggs until they are completely set on the bottom, 1 to 2 minutes. Slide a large spatula under the bread slices and flip them in a single motion.


5. Using a spatula, fold any excess egg from the sides of the bread over the bread as well as you can.


6. Put one slice of cheese on top of each slice of bread. Place the ham and turkey on top of one slice of cheese. Then fold the bread with the lone piece of cheese on top of the lunchmeat to form a sandwich.


7. Continue to cook until golden brown, 1 to 2 minutes. Flip and cook until the other side is golden brown, another 1 to 2 minutes. Serve.


Notes

· If you’d prefer your sandwich a bit eggier, feel free to add another egg!

· The meat I used is 1 bite/blue point for 2 oz. I used 1 oz. of each kind, but the Healthi app tried adding another bite since they were two separate ingredients. I chose to mark one as a 0-bite food so I was only “charged” the 1 bite for 2 oz. of meat.
