Roy’s Light Kielbasa with Broccoli and Red Cabbage

Ingredients

· 1 (13 oz.) pkg of turkey kielbasa, sliced into half-moons (I used Hillshire Farms.)

· Cooking spray

· 1 small onion, chopped

· 1/2 red pepper, chopped

· 2 cups bite-sized broccoli florets

· 1 cup shredded red cabbage

· 2 tsp garlic

· Salt, to taste

· Pepper, to taste

· 1/2 cup G Hughes Sugar-Free Honey Mustard Dipping Sauce


Directions

1. Spray a large skillet with cooking spray and heat on medium-high. Once the pan is hot, add the chopped onion and pepper. Sauté until onions start to become soft and translucent, 5-6 minutes.


2. Add the broccoli to the pan, stir to mix with onion and pepper, then cover to allow it to steam about 5 minutes. Stir occasionally.


3. Add the red cabbage to the pan and mix into the other vegetables. Cover the pan and steam about 3 minutes. Stir occasionally.


4. Add in the garlic, salt, and pepper, stir to mix with the vegetables, and heat until fragrant, about 30 seconds.


5. Add in the half-moons of kielbasa (you can, of course, just cut discs, if you would like) and stir in. Heat through, about 5 minutes.


6. Turn the heat down to medium and add the sauce to the pan, stirring to coat everything. Heat through for about 2-3 minutes and you are done! (If you are serving this with something like pasta or rice that can absorb some sauce, add a bit of water to thin it to your preferred consistency.)


7. Serve with pasta, rice, potatoes, cauliflower rice, or anything you’d like!
