Roy's Light Maple Bourbon Walnut Nice Cream

Serves 4 2 Better Balance Bites/Blue Points

Calories 150 Fat 4.1g Carbs 24.8g Protein 2g


Ingredients

· 3 ripe bananas, sliced and frozen

· 1/4 sugar-free maple syrup (I use Vermont brand, which would be 0 bites/points)

· 2 Tbsp bourbon (see notes)

· 2 tablespoons almond milk

· 1 teaspoon vanilla extract

· 3 Tbsp (22 grams) walnuts, toasted (see notes)


Directions

1. Allow the bananas to thaw slightly, about 5 minutes.


2. Place the bananas, syrup, bourbon, almond milk, and vanilla into the food processor. Blend until smooth.


3. Add the walnuts and pulse until they are well incorporated.


4. Serve immediately for a soft-serve consistency or freeze for 30 minutes for a firmer texture.



Notes

· With the bourbon, this is NOT a kid-friendly dessert since the alcohol is not cooked out. However, you can omit the bourbon and have a delicious Maple Walnut dessert.

· You can omit the walnuts to save a bite/point.
