Roy’s Light Magic Chocolate-Peanut Butter Pie

Ingredients

· Cooking spray

· 1/2 cup flour

· 1 tsp baking powder

· 1/4 teaspoon salt

· 4 eggs

· 1/2 cup almond milk

· 1/2 cup plain nonfat Greek yogurt

· 1/2 cup brown sugar replacement

· 1/4 cup light butter, melted and cooled slightly

· 2 Tbsp sugar-free maple syrup

· 1 teaspoon vanilla

· 1/4 cup powdered peanut butter

· 2 Tbsp unsweetened cocoa powder


Directions

1. Heat oven to 350F degrees. Coat a 9-inch pie baking dish with cooking spray and set aside. In a small bowl, whisk together the flour, baking powder, and salt; set aside.


2. Add eggs, almond milk, yogurt, sugar replacement, melted light butter, and vanilla to a blender. Blend about 15 seconds to combine everything. Scrape down the sides of the blender and add the powdered peanut butter and cocoa and blend again for about 10 seconds to combine. Scrape down the sides of the blender and add in the flour mixture. Blend another 15 seconds or so until combined.


3. Pour into pie dish and bake for 40-45 minutes, until the center is set and a toothpick inserted in the center comes out clean.


4. Remove pie from oven and set on cooling rack. Once cooled to room temperature, cover the pie and set in the refrigerator at least 2 hours before serving.


Notes

· Room temperature ingredients are best, but not crucial since we’ll be using a blender.

· Make this without a blender by using a mixer and processing in the same order.

· You could swap out the brown sugar replacement for granulated sugar replacement, but the deep flavor of the brown sugar adds a richer taste to the pie.

· You can omit the syrup and use 2/3 cup of sugar replacement, but I prefer the texture using a bit of syrup.

· Want more chocolate flavor? Use 3 Tbsp each cocoa powder and powdered peanut butter.

· Want JUST chocolate? Increase cocoa powder to 1/4 cup and add another 2 Tbsp flour.

· I used I Can’t Believe It’s Not Butter Light and PB2 Powdered Peanut Butter to obtain the nutrition facts listed.

· Need to increase your protein intake? Swap out the cocoa powder and powdered peanut butter for flavored protein powders. The texture shouldn’t be affected much.
