Roy’s Light Magic Caramel Apple Pie (with Variations)

Ingredients

· Cooking spray

· 3 large apples, peeled and sliced (see notes)

· 1 teaspoon ground cinnamon

· 1/3 cup (about 38g) walnuts, chopped into small bits, optional (see notes)

· 1/3 cup sugar-free caramel sauce (see notes)

· 1/2 cup almond milk

· 1/2 cup flour

· 2 eggs

· 2 Tbsp brown sugar replacement

· 2 Tbsp unsweetened applesauce

· 1 1/2 tsp baking powder

· 1/2 tsp salt


Directions

1. Preheat oven to 350° F. Coat a 9-inch pie plate with cooking spray.


2. In a medium bowl, mix the apples and cinnamon until the apples are well coated. Stir in the walnuts, if using, and the caramel sauce. Pour into the prepared pie plate.


3. In the same bowl, blend the remaining ingredients with a whisk or electric mixer until well blended. (see notes) Pour over apple mixture in the pie plate.


4. Bake 45-55 minutes, or until the center is set and a toothpick inserted there comes out clean. Cool 15-20 minutes before serving. Store leftovers covered in the refrigerator.


Notes

· If you’d prefer, you don't have to peel the apples.

· Feel free to swap the apples for pears.

· If large apples aren’t available, you can use 4 medium or 6 small apples.

· The nutrition facts are calculated using the walnuts, but they can be eliminated.

· I used Walden Farms Caramel Syrup for this. If you use a thicker sauce, like Smucker’s Sugar-Free, thin it slightly with a tablespoon or two of hot water.

· If using a blender, after preparing the apples, add the remaining ingredients—including any residual flavor from the apple-prep bowl—to the blender and process until smooth.

· If you’d like to make a Magic Apple-Cranberry Pie, swap one apple for 1 cup of fresh or thawed frozen cranberries, eliminate the caramel sauce, and add 6 Tbsp granulated sugar replacement. Toss the apples and cranberries with the cinnamon and 4 Tbsp of the sugar replacement. The other 2 Tbsp go into the batter with the brown sugar replacement.

· If you’d like a plain Magic Apple Pie, eliminate the caramel sauce, increase the brown sugar replacement to 1/4 cup and add 1/4 cup granulated sugar replacement. Toss the apples with the cinnamon and the 1/4 cup of granulated sugar replacement.

· Cover any remaining pie and store in the refrigerator for up to 5 days.

· This can be frozen, then thawed in the fridge, but it may slightly affect the texture.
