Roy’s Light Mac and Cheesesteak

Ingredients

· Cooking spray

· 1 small onion, thinly sliced

· 1/2 green pepper, thinly sliced

· 1/2 red pepper, thinly sliced

· 1/2 cup sliced mushrooms (optional)

· 1 lb frozen sandwich steaks OR 96% fat-free ground beef

· 1 tsp Italian seasoning

· 3/4 tsp salt, or to taste

· 1/2 tsp pepper, or to taste

· 1/2 tsp garlic powder

· 1/2 tsp onion powder

· 9 oz can of Fritos Mild Cheddar Cheese Dip

· 8 oz. pkg. Fiber Gourmet elbows (or rotini)

· Salt for pasta water


Directions

1. Spray a large skillet with cooking spray and set over medium-high heat. Fill a large pot with water and set over high heat to boil. Cut the sandwich steaks in half lengthwise, then into 6-8 slices width-wise, and set aside.


2. Add the onion, peppers, and mushrooms to the hot skillet and sauté 6-8 minutes until softened.


3. Push the vegetables to the sides of the pan and place the sandwich steaks OR ground beef in the center, breaking either into bite-sized chunks. Sprinkle the salt, Italian seasoning, pepper, garlic powder, and onion powder over everything in the skillet and brown the meat.


4. Once the water is boiling, add at least 1 tablespoon of salt to help season the pasta. Add the elbows and cook for 8-10 minutes. Once done to your liking, drain and set pasta aside.


5. When the meat has browned, add cheese dip and pasta, mix together, and serve.



NOTE: A serving of Fiber Gourmet pasta is supposed to be 2 bites/points each. However, if you put the 8 oz package into the recipe builder, it comes out to 10 bites/points and ups the points for this recipe to 8. What I do is alter the amount for the package to 6 1/2 oz to make it 8 and better represent a serving of the pasta.
