Ingredients
· Baking or cooking spray
· 2 cups flour
· 1/3 cup vanilla protein powder OR flour
· 1 Tbsp baking powder
· 1/4 tsp salt
· 3 large eggs
· 2/3 cup sugar replacement
· 1/2 cup unsweetened applesauce (see notes)
· 1/2 cup vanilla nonfat Greek yogurt
OR 1/2 cup nonfat Greek yogurt + 1 tsp vanilla + a splash of almond milk
· 1 tsp vanilla extract (even if you added some with the yogurt!)
· 1/2 cup + 2 Tbsp sugar-free jam, divided (see notes)
Ingredients
1. Preheat oven to 350°F. (see notes for another method of baking!) Coat a 9” cake pan with baking spray OR cooking spray with a dusting of 1 Tbsp of the above flour.
2. In a small bowl, whisk together the flour, protein powder (if using), baking powder, and salt. Set aside.
3. In a large bowl, whisk the eggs to break them up, then add in the sugar replacement, applesauce, yogurt, and vanilla. Whisk into a homogenous mixture.
4. Add the dry ingredients into the wet and, with a spoon or spatula, mix until just combined and no flour is visible.
5. Spoon about half the batter into the prepared pan, spreading it out evenly and making sure it gets into the corners. Take 1/4 cup of the jam and dot it all over the batter. With a fork or knife, cut back and forth through the jam to swirl it across the batter. Top it the remaining batter, dot it with remaining jam, and repeat the swirling procedure.
6. Bake 25-30 minutes, rotating the pan halfway through. The cake is done when a toothpick inserted comes out clean. Be sure to test in the cake, not the jam!
7. Remove from the oven and cool on a rack for 10-15 minutes before taking the cake from the pan to cool completely on the rack.
8. Cut into 9 or 12 pieces, depending on the size you prefer, and serve.
Notes
· In place of the applesauce, you can use pumpkin puree or mashed banana, though I would add a splash of water or almond milk to loosen them up a touch.
· You can use any flavor of jam for this cake. You can even use regular jam if you wish.
· For a fluffier texture, start the cake in a COLD oven! Do not preheat the oven as stated above. Once the batter is ready, place the pan in the oven, THEN turn the oven on to 350°F. It will bake about the same length of time, but start checking it at 20 minutes in case your oven preheats hotter. You will be surprised how this little trick improves the texture of the cake!
