Roy’s Light Homemade Peanut Butter Banana Ice Cream Sandwiches

12 Servings 4 Better Balance Bites /Blue Points

Calories 114 Fat 2.6g Carbs 17.2g Protein 1.8g


Ingredients

· 1 (8 oz.) tub of Fat-Free Cool Whip, thawed (others may affect the bites/points)

· 6 tbsp Banana Better’n Peanut Butter (or any nut butter, though may affect bites/points)

· 24 Pizelles, any flavor


Instructions

1. Put Cool Whip and peanut butter into a medium bowl. Mix until it is a uniform color throughout.


2. Lay out 12 pizzelles onto a baking sheet. Top each with 2 level tablespoons of the Cool Whip-peanut butter mixture (dividing any remaining evenly among the pizzelles). Top each with another pizzelle.


3. Freeze a few hours until firm. And enjoy!


4. Keep frozen in a zip-lock freezer bag for a few months. (If they last that long!)



Neapolitan Version:

· Swap out the peanut butter for 1 (0.3 oz) pkg of sugar-free strawberry gelatin.

· Use 1 vanilla pizzelle and 1 chocolate pizzelle for each sandwich.

· These will be 3 Better Balance bites/Blue points each!


Notes:

· You can swap out any nut butter you’d like for Better’n Peanut Butter, though your choice obviously may affect the bites/points.

· You can also swap out any flavor of sugar-free gelatin for the strawberry and change the pizzelle flavors as you choose.

· You can also swap out the sugar-free gelatin for a sugar-free pudding mix. When I used pistachio pudding, I actually got 2 bites per sandwich!

· I haven’t tried it (YET) but you may be able to use sugar-free pudding in place of the gelatin, but start off with half the package to make sure the flavor/texture is where you want it.

· Feel free to add any mix-ins (nuts, chocolate chips, sprinkles, etc.) but make sure you adjust the recipe for accurate tracking.
