Roy’s Light Homemade Granola

8 (1/2 cup) servings 3 Better Balance Bites/Blue Points

Calories 115 Fat 1.8g Carbs 27.1g Protein 4.2g


Ingredients

· 2 large egg whites

· 1/3 cup sugar-free maple syrup

· 1/4 cup brown sugar replacement

· 1 tsp vanilla extract

· 1 Tbsp ground cinnamon

· 1/2 tsp ground nutmeg

· 1/4 tsp salt

· 2 cups old-fashioned oats

· 1 cup rice cereal

· 1 cup Fiber One or All-Bran cereal


Directions

1. Preheat the oven to 325°F. Line a rimmed baking sheet with parchment paper OR coat it well with cooking spray.


2. In a large bowl, whisk the egg whites until slightly frothy.


3. Whisk in the maple syrup and brown sugar replacement until the replacement dissolves.


4. Whisk in the cinnamon until fully incorporated with no clumps.


5. Pour in the oats and both cereals. Stir gently with a spatula until cereals are coated.


6. Spread the mixture evenly onto the prepared pan. Bake at for 20 minutes.


7. Remove from the oven and break up the granola as you stir it around the pan. You can remove the parchment paper now if it is making stirring too difficult.


8. Return to the oven and bake an additional 10 minutes, then stir again.


9. Bake for an additional 5-10 minutes or until the granola is crunchy.


10. Let granola cool 5 minutes before breaking apart any larger clusters.


11. Cool the granola completely to room temperature on the pan before transferring to an airtight container.


Note:

· You can add in chopped nuts with the cereals, or add in dried fruit or chocolate chips after it has cooled completely. Adjust the bites/points to reflect additions.
