Roy’s Light Gingerbread Pancakes with Cream Cheese Syrup

Makes 6 pancakes 1 Better Balance Bite per pancake / 3 Bites for 2 / 4 Bites for 3

(Per pancake) Calories 68 Fat 1.2g Carbs 13g 3.2g


Ingredients

· Cooking spray

· 1/2 cup flour

· 1 Tbsp brown sugar replacement

· 1 tsp baking soda

· 1 tsp gingerbread spice (recipe follows) OR 1/2 tsp each ginger, 1/2 tsp cinnamon, 1/8 tsp nutmeg, and 1/8 tsp ground cloves

· 1/2 tsp ginger (in addition to what was added above!)

· Pinch of salt

· 1/4 cup nonfat Greek yogurt

· 1/4 cup pure pumpkin puree (NOT pumpkin pie mix!)

· 1 egg (or 2 egg whites)

· 2 tsp molasses

· 1/4 tsp vanilla extract

· 1/4 – 1/3 cup water (to thin out batter)

· Optional additions: 1 small apple diced small; 1 small pear diced small; chopped nuts; candied ginger – ADDITIONS MAY AFFECT POINTS!


Directions

1. Whisk flour, sweetener, baking soda, pie spice, and salt in a medium bowl to blend.


2. Add remaining ingredients and mix until it just comes together. If including optional additions, mix those in now, OR dot them on top once they are in the pan or griddle!


3. Heat pan or griddle on medium heat and spray with cooking spray.


4. Add about 1/4 cup of batter to the pan/griddle to make 6 pancakes.


5. Once browned (about 3 minutes), flip the pancakes and cook about 2 minutes more.


6. Serve with the following Cream Cheese Syrup, any other sugar-free syrup, whipped cream, or another low-point option!


Cream Cheese Syrup

Ingredients

· 1/2 cup nonfat Greek yogurt

· 1/3 cup almond milk

· 3 tsp (8 grams) cheesecake-flavored sugar-free instant pudding

· 4 tsp confectioners' sugar replacement

· 1 tsp vanilla extract

· Pinch of salt


Directions

1. Whisk all the ingredients together in a small saucepan and set over medium heat. Cook, whisking frequently, until warmed through. If a little too thick for your liking, add a splash of almond milk. Serve over pancakes, cake, ice cream, or anything you like.


Gingerbread Spice

· 2 Tbsp ground allspice

· 2 Tbsp ground cinnamon

· 2 Tbsp ground ginger

· 1 Tbsp ground cloves

· 1 Tbsp ground nutmeg

· pinch ground black pepper


Directions

1. Whisk together. Store in an airtight container.
