Roy’s Light Fruit Cobbler

Ingredients

· 5 cups fresh or frozen fruit (peel and cut into bite-size pieces for larger fruits; berries can be whole or cut if larger / If frozen, thaw and drain)

· 3 tablespoons plus ⅓ cup Swerve brown sugar replacement (or other 1-to-1 brown sugar replacement), divided

· 1 tablespoon plus 1 cup self-rising flour (OR 1 cup + 1 Tbsp all-purpose flour mixed with 1 1/2 tsp baking powder and 1/2 tsp. salt), divided

· 1 egg

· ¼ teaspoon ground cinnamon

· 2 teaspoons lemon juice

· 2/3 cup 0% fat Greek yogurt, such as Fage 0%


Directions

1. Preheat the oven to 425˚F.


2. In a large bowl, toss together the fruit, the 3 tablespoons of brown sugar, the 1 tablespoon of flour, the lemon juice, and the cinnamon. Spoon the mixture into a 9x9 baking dish and bake for 10 minutes.


3. As the fruit cooks, using the same bowl you mixed the fruit in, whisk the egg with the remaining ⅓ cup brown sugar replacement and yogurt until smooth. Add the remaining 1 cup flour and stir until a moist, cohesive dough forms.


4. Spoon dollops of dough all over the baked fruit and spread slightly if necessary to cover more (but NOT all) of the fruit.


5. Return the cobbler to the oven. Bake for about 25 minutes, until bubbling and golden brown.


6. Let the cobbler cool slightly before serving.

Can you freeze this, and how would you do it?

You could freeze it. I would portion it out first and pack it in an airtight freezer container.
