Ingredients:
Dough
· 1 cup self-rising flour OR 1 cup all-purpose flour, 1 & 1/2 tsp baking powder, 1/2 tsp salt
· 2 Tbsp sugar replacement
· 1/4 tsp cinnamon
· 1/4 cup nonfat Greek yogurt
· 2 Tbsp almond milk
· 1/4 cup plain seltzer
Filling
· 1/2 cup + 2 Tbsp sugar-free maple syrup (I use Vermont brand)
· 1 tsp cinnamon
· Pinch of salt
Icing
· 2 Tbsp Roy’s Light Homemade Cream Cheese (others may add bites/points), room temp
· Remaining prepared maple filling (see below)
· 1/2 tsp maple extract, optional
Directions:
1. Preheat oven to 425°F. Spray an 8- or 9-inch loaf pan with cooking spray. Set aside.
2. In a small saucepan, mix the filling ingredients together. Set over medium-high heat, stirring frequently, until it has darkened, become thick, and reduced by half, about 3-4 minutes. Put it in a bowl and set it aside to cool.
3. In a small bowl, combine the flour (and baking soda and salt, if not using self-rising) with the sugar replacement and cinnamon. Set aside.
4. In a medium bowl or large measuring cup, combine the yogurt and almond milk until homogenous. GENTLY mix in the seltzer with a fork or butter knife so as not to destroy the bubbles.
5. Add flour to the liquid, folding it GENTLY with a fork or butter knife until combined into a thick, moist dough.
6. GENTLY remove dough from the bowl to a floured work surface.
7. GENTLY fold the dough over itself 3-4 times until it feels “pillowy.” Pat out into a rough rectangle shape, then use a rolling pin to roll it into a rectangle about 11” x 7”.
8. Spread 3 Tbsp of the prepared filling all over the dough. KEEP ANY REMAINING FILLING IN THE BOWL AND DO NOT CLEAN IT OUT! Set the bowl aside to mix the icing in.
9. Using a bench scraper or spatula, scrape one edge of a short side up onto itself and continue rolling, using the scraper or spatula to help free the dough from the counter. Gently press in the ends of the dough tube to make them a little more even.
10. Cut the dough tube as evenly as possible into 4 rolls. You can use the bench scraper, a spatula, a knife, or even dental floss (unflavored, of course!) Set the rolls into the prepared loaf pan, touching slightly, putting each one more to the opposite side of the pan, like this:

11. Bake 20-25 minutes until lightly browned and the top feels set. Allow to cool 5 to 10 minutes as you prepare the icing.
12. Mix the icing ingredients together in the bowl you have the remaining filling in. Once the rolls have cooled enough, spread the icing over them while still in the pan. Enjoy!
NOTE: Store them, well covered, in the fridge and reheat for 15-30 seconds in the microwave!
