Roy’s Light Faux Ricotta Pasta

Makes 4 servings (Sauce only) 2 Better Balance Bites / Blue Points

(With my pasta) - 4 Bites/Points

(With my pasta) Calories 182 Fat 4g Carbs 45.1g Protein 16.1g


Ingredients

· 8 oz. of your favorite pasta (I use Fiber Gourmet - Bites/points will vary with your choice!)

· 8 oz. of Fat-Free Cottage Cheese (OR Ricotta, but it will be 1 point more)

· 1/2 cup Parmesan or Pecorino Romano Cheese, grated

· ¼ cup Fresh Parsley, chopped

· ¼ tsp Black Pepper or to taste

· ½ tsp Salt or to taste

· ½ cup of your Hot Pasta Water


Directions

1. If using cottage cheese, whir it in a food processor or blender until it reaches a smooth consistency. If using ricotta, skip this step, but add 1 more point per serving!


2. Boil salted water for the pasta. While pasta cooks, prepare the “ricotta” sauce.


3. In a large bowl, combine blended cottage cheese (or ricotta), parmesan, pepper, parsley, and salt.


4. Add ricotta mixture to a large skillet or pot and add 1/2 cup of the hot pasta water (preferably toward the end of the pasta cooking). Mix until blended. Turn heat on to medium-high.


5. Drain pasta once it’s done and add it to the “ricotta” mixture. Toss to coat evenly using tongs or two forks.


6. Top with more parsley, parmesan, and pepper to taste. Turn off the heat and serve.



Notes:

* A 2 oz serving of Fiber Gourmet is 2 bites/points, but if you the whole package (4 servings) into the Recipe Builder, it will come up as 5 per serving. I enter it as 6 & 7/8 oz to get an accurate serving reading.
