Roy’s Light Faux Cannoli

Serves 1 4 Bites/Blue Points with Lily’s chips / 3 Bites/Points without chips

Calories 143 Fat 5g Carbs 34.8g Protein 9g

Recipe can easily be doubled, tripled, etc!


Ingredients:

· 1/4 cup fat-free cottage cheese

· 1 Tbsp nonfat Greek yogurt

· 2 Tbsp powdered sugar replacement

· 1/4 tsp vanilla extract

· 1/8 tsp cinnamon

· 7g (about 16) Lily’s sugar-free chocolate chips, optional

· 1 Ortega Fiesta Flats Taco Shell


Instructions:

1. THE DAY BEFORE: Line a fine-mesh sieve with 2-3 coffee filters and place over a bowl to catch the liquid as it drains. Add in the cottage cheese and Greek yogurt (no need to mix them). Cover with another coffee filter or two, then wrap in plastic wrap. Place it in the fridge at least 12 hours to drain excess liquid.


2. In the bowl of a small food processor, add the drained cottage cheese/yogurt mixture, powdered sugar, vanilla, and cinnamon. Process about 15-20 seconds.


3. Add in the chocolate chips, if using and if you want them incorporated. Process again for about 30 seconds until you get a smooth ricotta-like texture.


4. Spoon the mixture into the Fiesta Flats Tach Shell, spreading it our into the corners. Sprinkle on the chips if you prefer the whole chips on top. Enjoy immediately! (Do NOT store!)



Notes:

· Change up the flavors as you like. Add in some orange zest or lemon zest in place of the cinnamon. Use some Skinny Syrups or other flavorings in place of the vanilla. Instead of chips, use cherries, nuts, granola, etc. Make it as YOU like it!

· Apple Pie Cannoli: Add 1 1/2 tablespoons of unsweetened applesauce to the cottage cheese and yogurt to drain overnight. Omit the chocolate chips. OR, make it Caramel Apple by adding Lily's Salted Caramel chips!

· Pumpkin Pie Cannoli: Add 1 1/2 tablespoons of pumpkin puree to the cottage cheese and yogurt to drain overnight. Use pumpkin pie spice in place of the cinnamon and, if you can find it, pumpkin pie extract for the vanilla (although the vanilla is fine). In place of the chocolate chips, use Lily's Pumpkin Spice Chips. If desired, add a bit of fat-free whipped cream for a true pumpkin pie feel.
