Roy’s Light “Elvis” Pancakes

Ingredients:

· 3 strips of center-cut bacon

· 1/3 cup flour

· 1/3 cup powdered peanut butter

· 1 tsp baking powder

· 1/8 tsp salt

· 3/4 cup mashed bananas, about 6-7 oz without peel

· 1 egg

· 1/4 cup sugar replacement

· 2 Tbsp almond milk

· 1/2 tsp vanilla

· Cooking spray, optional

 

Directions

1. Cut bacon strips in half lengthwise, then into small pieces. Add to a cold pan, set it over medium heat, and cook, stirring frequently, until bacon pieces are crispy. Transfer to a paper towel-lined plate and set aside. Reserve the bacon grease.

 

2. In a small bowl, whisk together the flour, powdered peanut butter, baking powder, and salt. Set aside.

 

3. In a medium bowl, whisk together the mashed banana, egg, sugar replacement, almond milk, and vanilla.

 

4. Add the flour mixture into the banana mixture and, using a spoon or spatula, stir together just until no flour is visible and set aside for 10 minutes. (see notes)

 

5. Heat a griddle to 350°F or a large nonstick skillet over medium-high heat. Once hot, add the bacon grease (see notes) to the griddle or about 1/2 of the grease to the skillet and spread over the surface. Portion out 6 pancakes (about 1/4 cup each) on the griddle or 3 pancakes on the skillet so as not to crowd them. (You will cook the first three in the skillet, add another 1 1/2 tsp bacon grease, and cook the other three.)

 

6. Sprinkle about 1 tsp of bacon over each of the pancakes as they cook. Once the underside is browned, about three minutes, flip the pancakes and cook another 2 minutes or so until the other side is browned. Serve immediately as you like.

 

Notes

· This recipe can easily be doubled.

· These pancakes freeze well and can be reheated from frozen or thawed.

· If the batter looks too thick after resting, add another tablespoon or two of almond milk and carefully stir it in so as not to develop any gluten.

· It’s said that bacon grease is included in the bites/points for bacon. If you’d prefer, you could use cooking spray in its place, though the bacon flavor will be slightly milder.

· Play around with the flavors. Swap out bacon for sugar-free chocolate chips or strawberry dices. Or simply have banana and peanut butter pancakes. Or swap the powdered peanut butter with more flour, unsweetened cocoa powder, or even a flavored protein powder. If using unsweetened cocoa powder, increase the sweetener to 1/3 cup.
