Roy’s Light & Easy Caramel Popcorn

6 (1 cup) servings 2 Better Balance Bites/Blue Points

Ingredients

· Cooking spray

· 3 Tbsp unpopped popcorn kernels (6 cups popped)

· 1 Tbsp light butter

· 1 (2.75 oz) pkg Werther’s Original Sugar-Free Caramel Hard Candies (25 candies) (see notes)

· 1/4 tsp salt (see notes)


Instructions

1. Preheat the oven to 275 degrees. Line a large baking sheet with parchment paper or a silicone mat. Coat a large bowl lightly with cooking spray.


2. Pop the popcorn in the microwave or an air-popper. (see notes) Remove any unpopped kernels and transfer to a large bowl.


3. Melt the butter, caramel candies, and salt in a medium saucepan over medium heat, stirring frequently to combine. Once melted and homogenous, pour the hot caramel over the popped popcorn and stir to coat thoroughly. Pour the popcorn onto the lined baking sheet


4. Bake 20 minutes, carefully stirring halfway through. (see notes) Remove from the oven and spread across a parchment-lined counter. (see notes) Cool completely before storing in an airtight container.


Notes

· Werther’s has 3 flavors of sugar-free caramels you can use depending on your tastes: Caramel, Chocolate Caramel, and Coffee Caramel.

· If you’d prefer more of a salted caramel flavor, you can increase the salt to 1 tsp.

· There are many ways to pop popcorn in the microwave. I use a silicone popcorn popper from Popco. You can also pop it in a paper bag by adding kernels to a paper bag, tightly folding the top over twice. Or you can use a large bowl with a dinner plate on top of the bowl to act as a lid. (Be very careful removing the bowl since it will be very hot!!!) Set the microwave on High for 4 minutes, stopping when you hear a few seconds of silence between pops.

· Be aware that the oven time may be different if your oven runs hotter or colder than average.

· If you don’t have space to cool the popcorn on the counter, simply lay it out on a cool parchment-lined baking sheet OR pour it back into the large bowl used earlier and stir every minute or two while it cools so it doesn’t stick together.
