Roy’s Light Cowboy Caviar

Ingredients

  • 1 (15 oz) can black beans, drained and rinsed (see notes)

  • 1 (15 oz) can pinto beans, drained and rinsed (see notes)

  • 1 (15 oz) can corn, drained

  • 1 (10 oz) can diced tomatoes with green chiles, drained (see notes)

  • 1/2 medium red onion, diced

  • 1/2 medium green pepper, seeded and chopped (see notes)

  • 1/2 medium red pepper, seeded and chopped (see notes)

  • 1/4 cup fresh parsley, chopped

Dressing

  • 1/4 cup lime juice

  • 1 Tbsp olive oil

  • 1 Tbsp sugar replacement

  • 1 tsp garlic powder

  • 1/2 tsp cumin

  • 1/2 tsp oregano

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

 

Directions

  1. In a large bowl, combine salad ingredients, mixing so they are well combined.

  2. In a small bowl, whisk together dressing ingredients until fully combined. Pour over salad and stir to coat well.

  3. Serve as a side or (as is typical) a dip with low-“chew” pita or crackers.

 

Notes

  • You can swap out the beans listed for other types based on preference or what you have on hand.

  • If you can’t find a 10 oz can of tomatoes with chiles, use just 1 1/4 cups of a larger can.

  • You could use a whole pepper of one color, but each of those listed offers a different flavor profile to the dish.

  • I don't recommend using frozen veggies in place of fresh here because the texture would be off.

  • You can eliminate the olive oil, but it does add great flavor and helps the herbs and spices to coat the veggies.

  • Due to the acidity of the dressing and the lack of dairy, this can safely sit at room temperature for several hours, making it great for picnics, potlucks, and packed lunches!

  • Store leftovers in the refrigerator for up to 5 days.
