Roy’s Light Coffee Bars Susan

Ingredients

· Baking spray

· 3/4 cup almond (or all-purpose) flour

· 1/2 cup coffee-flavored protein powder

· 3/4 tsp baking powder

· 1/2 tsp salt

· 1/4 cup espresso powder or instant coffee

· 1 Tbsp cocoa powder

· 2 Tbsp hot water OR hot coffee

· 3/4 cup sugar replacement

· 3/4 cup pumpkin puree

· 3 eggs

· 2 tsp vanilla


Ingredients

1. Preheat oven to 350°F. Coat an 8” or 9” pan with baking spray, including the sides. Add a parchment paper or foil sling, if desired, to make removing the bars easier.


2. In a medium bowl, whisk together the flour, protein powder, baking powder, and salt.


3. In a small bowl, combine the espresso powder, cocoa, and hot water to form a loose paste.


4. In a large bowl, mix together the sugar replacement, pumpkin, and espresso powder “paste” until homogenous. Add in the eggs and vanilla and beat until smooth.


5. Add flour mixture to the wet mixture and mix until it forms a smooth, but loose batter. Pour the batter into the prepared pan, shaking the pan to get it into the corners. Tap the pan a few times on the counter to release any trapped air bubbles.


6. Bake in the preheated oven for 20 minutes, rotating the pan halfway through baking, until a toothpick inserted in the center comes out clean. The center of the bar may still appear slightly “glossy.”


7. Allow to cool completely in the pan before turning out onto a cutting board. Cut into 12 bars.


Notes

· This was tested using almond flour and the nutrition facts above reflect that.

· The cocoa powder is there to enhance the coffee flavor. You can replace the cocoa powder with more espresso powder if a stronger coffee flavor is desired.

· I used coffee-flavored protein powder, but vanilla and chocolate would also work well.

· You can dust these with 1 Tbsp of real powdered sugar and not alter the bites/points.

· Top them with a glaze or frosting if you like.
