Ingredients
Chili
· 1/4 cup (4 Tbsp) tomato paste
· 1 lb 96% lean ground beef (can use ground chicken or turkey breast for 0-Bite servings)
· One 28-ounce can crushed tomatoes
· 1 onion, finely chopped
· 1 Tbsp Worcestershire sauce
· 1 Tbsp vinegar, apple cider vinegar preferred
· 1 Tbsp chili powder
· 2 tsp minced garlic
· 1 1/2 tsp unsweetened cocoa powder
· 1 tsp ground cumin
· 1 tsp ground cinnamon
· 1 tsp Kosher salt
· 1/2 tsp ground pepper
· 1/4 tsp ground cloves
For serving
· 8 ounces spaghetti, cooked to desired doneness, optional (see notes)
· 1 cup shredded fat-free cheddar cheese, divided, optional (see notes)
· Diced raw onion, optional (see notes)
· Canned small red kidney beans, drained and warmed, optional (see notes)
Directions
1. Set a large pot over medium-high heat. Add tomato paste and allow to cook until it begins to darken, about 1-2 minutes. You do NOT need any cooking spray, but if you feel more comfortable using it, you of course can do so.
2. Add the remaining chili ingredients to the pot. With a wooden spoon or potato masher, break up the ground meat into small bits. Stir the ingredients together, scraping up any bits of tomato paste from the bottom of the pot.
3. Bring the chili to a boil, then reduce the heat to medium and cook, stirring occasionally, until the sauce reduces slightly, about 30 minutes.
4. Taste for seasoning and add more salt and pepper to taste. Serve as you desire. (See notes.)
Notes
· Cincinnati chili is typically served over spaghetti (this is known as “2-way”) but can also be served on low-bite/low-point hot dogs.
· There are 5 ways Cincinnati Chili is typically served:
o Alone in a bowl would be “1 way.”
o As stated above, a “2-way” is just chili over spaghetti.
o A “3-way” is a “2-way” with cheese.
o A “4-way” is a “3-way” with minced raw onions.
o A “5-way” is a “4-way” with small red kidneys beans that have been warmed in a
separate pan and are never added to the chili directly.
