Ingredients
· Cooking spray
· 2 (15 oz) cans chickpeas OR 1 (29 oz) chickpeas
· 1 cup finely chopped onion (roughly 1 medium onion)
· 1/4 cup flour
· 3 Tbsp grated parmesan
· 1 Tbsp dried parsley
· 1 Tbsp minced garlic (or 3 cloves, minced)
· 1 tsp ground cumin
· 3/4 tsp ground coriander (see notes)
· 3/4 tsp paprika
· 1 Tbsp lemon juice
· 1 Tbsp water
· 1 tsp salt
· 1/2 tsp black pepper
Directions
1. Preheat the oven to 400°F. Coat a baking sheet with cooking spray or line it with parchment paper.
2. Add all ingredients (except cooking spray) to a large bowl. Mash with a potato masher or a fork until coarsely mashed and holds its shape when pressed together. If it doesn’t hold, add 1 to 2 more teaspoons water. (see notes)
3. Shape the mixture into 12 small patties about 1/2” thick, approximately 3 Tbsp per patty. Arrange the patties onto the prepared baking sheet and lightly coat with cooking spray.
4. Bake 20 to 25 minutes, or until lightly golden brown. Serve with a splash of lemon juice, light dressing, or tzatziki sauce either on a plate, on a salad, or in a pita with lettuce and tomatoes.
Notes
· No coriander? Use more cumin, oregano, curry powder, or garam masala.
· You can pulse the ingredients in a food processor, just until it is coarsely mashed and holds its shape when pressed together, about 10 pulses.
· You can make the fritters ahead and store them in the fridge or in the freezer.
o Refrigerate uncooked mixture or cooked fritters in an airtight container up to 4 days.
o Freeze shaped, raw patties on a parchment-lined baking sheet a few hours until solid,
then transfer to an airtight, freezer-safe container and store up to 3 months. Freeze
cooked fritters up to 3 months in an airtight, freezer-safe container.
o Cook the fritters from frozen at 400°F for about 25-30 minutes if raw; or for about 10-
12 minutes if precooked. You can also cook them in an air fryer at 400°F for 15
minutes (if raw) or 5-8 minutes (if precooked).
