Roy’s Light Chicken Potato “Queso-role”

Ingredients

· Cooking spray

· 2 tsp chili powder (see notes)

· 1 1/2 tsp garlic powder

· 1 tsp onion powder

· 1/2 tsp cumin

· 1/2 tsp salt

· 1 lb russet potatoes, washed and cubed (see notes)

· 1 lb. boneless skinless chicken breasts

· 1 (14.5 oz.) can diced tomatoes with green chiles, drained

· 1 (15 oz) can black beans, drained and rinsed (see notes)

· 1 cup salsa con queso (such as Tostitos)


Instructions

1. Preheat oven to 400° F. Coat a 9” baking dish with cooking spray.


2. In a small bowl, mix together the chili powder, garlic powder, onion powder, cumin, and salt. Toss 2 tsp of the spice mixture with the cubed potatoes. Set the rest aside.


3. Layer the potatoes on the bottom of the prepared baking dish and put into the oven. Bake for 15 minutes while preparing the chicken.


4. Cut the chicken breasts into bite-sized pieces and toss with 2 tsp of the spice mixture.


5. Once the potatoes have cooked for 15 minutes, remove the pan from the oven. Scatter the chicken pieces evenly over the hot potatoes. Top evenly with the diced tomatoes and green chiles and black beans. Sprinkle the remaining spice mixture over the beans and tomatoes, mix it gently, then spread the salsa con queso on top.


6. Bake for 25-30 minutes, until the chicken is cooked through.


7. Allow it to cool 5-10 minutes before serving.


Notes

· Having guests or doing meal prep? Double the recipe and bake it in a 9x13” pan. Add about 5 minutes to the cooking times of both the potatoes and the chicken.

· Out of chili powder? Here’s the recipe I use to make my own. Just whisk together:

o 2 tablespoons paprika

o 1 1/2 teaspoons cumin

o 1 1/2 teaspoons garlic powder

o 1 teaspoon onion powder

o 1 teaspoons oregano

o 1/2 tsp smoked paprika (optional)

o 1/4-1/2 tsp cayenne pepper (optional)

· Keeping carbs/bites/points low? Replace the potatoes with cauliflower or broccoli florets or baby carrots.

· Feel free to change up the beans to what you like or have on hand.

We just had this for dinner! A real winner. I was wondering what side to have? I was about to serve it with a side salad, however it is very filling on its own. I did portion out tortilla chips and added veggies to dip in a bit of the queso sauce, as the casserole was finishing up baking time. Thanks Roy! This is a keeper. yum!

Definitely will be making this but subbing in lentils for the beans , because my husband hates beans lol
