Ingredients
· Cooking spray
· 1 (16 oz) can fat-free refried beans (see notes)
· 1 (4 oz) jar pimentos (including liquid) (see notes)
· 1 (10 oz) can red enchilada sauce
· 1 cup crushed tomatoes
· 12 small Mission Zero Net Carbs tortillas or any brand (see notes)
· 1 lb chicken breast, cooked and shredded (see notes)
· 1 (15 oz) can of pinto beans, drained and rinsed (see notes)
· 1 1/2 cups fat-free cheddar cheese
· Optional garnishes: nonfat Greek yogurt, onions, cilantro, scallions, avocado, etc.
Directions
1. Preheat the oven to 350°F. Coat an 8- or 9-inch square baking pan with cooking spray.
2. In a small bowl, combine the enchilada sauce and crushed tomatoes.
3. In a small saucepan, heat the refried beans with the pimentos and their liquid, as well as a bit of the sauce. Heat just until soft and spreadable, this will only take a few minutes. You may be able to spread it without heating, but it seems to spread more easily this way.
4. Spread 1/4 cup of the sauce over the bottom of the baking pan. Layer 4 tortillas over the sauce to cover as much of the bottom as possible.
5. Spread 1/2 of the refried bean mixture over the tortillas. (If necessary, you can “butter” them with it before adding to the pan.) Layer on 1/2 of the cooked chicken breast, 1/2 of the pinto beans, 1/2 cup of enchilada sauce, and 1/2 cup of the cheese over the tortillas.
6. Repeat this process one more time for the second layer. Place the remaining tortillas on the top, pour the remaining enchilada sauce over the tortillas, then sprinkle the remaining cheese over the top. Lightly spray the cheese with cooking spray to help it to melt smoothly.
7. Cover with foil and bake 30 minutes. Carefully uncover the pan and bake an additional 10 minutes.
8. Let sit for 5 minutes to firm up, top with optional garnishes, and serve.
Notes
· The bites and points can be affected by the tortillas used if not using the ones suggested.
· If you cannot find the suggested tortillas, any small tortillas will work. If you cannot find small ones, you can use 3-4 larger ones cut into quarters to make serving easier.
· The refried beans and pimentos can be removed to lower the nutritional facts.
· You could chop the cooked chicken, but I find the texture better when shredded.
· Feel free to use rotisserie chicken, shredded pork, or cook up some ground chicken, turkey, or even beef.
· You could do this as three layers instead of two, you will just need 4 more small tortillas and use 1/3 of the chicken and beans and about 1/3 cup of the sauce and cheese.
