Roy’s Light Chicken and Cheesy Hashbrown Waffles

Ingredients

Chicken

· Cooking spray

· 1/2 lb chicken breast, sliced into 4 “tenders”

· 1 egg, room temperature

· 2 tsp Dijon mustard

· 1/4 cup panko breadcrumbs

· 1 Tbsp grated parmesan

· 1/2 tsp paprika

· Pinch of black pepper

Waffle

· Cooking spray

· 2 cups hashbrowns, thawed, or softened about 30 seconds in the microwave

· 1/2 cup fat-free shredded cheddar cheese

· 2 eggs, room temperature

· 1 tsp chives, chopped

· 1/2 tsp salt (or to taste)

· 1/4 tsp onion powder

· 1/4 tsp garlic powder

· 1/8 tsp smoked paprika

· 1/8 tsp fresh ground black pepper

Sauce

· 2 Tbsp sugar-free maple syrup

· 2 Tbsp Dijon mustard

· 1/4 tsp paprika


Directions

Chicken

1. Preheat your air fryer, if necessary, or your oven to 400°F. In a shallow bowl, whisk together the egg and mustard. In another shallow bowl or a plate, combine the breadcrumbs, parmesan, paprika, and pepper. Set aside.


2. Dip the chicken strips into the egg mixture, then into the breadcrumb mixture to coat.


3. Spray your air fryer basket with cooking spray, then lay in the chicken strips. If using an oven, place a cooling rack inside a sheet pan, spray it with cooking spray, and lay the chicken strips on top.


4. Whether you use the air fryer or the oven, you will cook the chicken for 15-20 minutes. If using the air fryer, expect about 15 minutes. In the air fryer of if you do not have a cooling rack for your sheet pan, flip the chicken halfway through cooking. Especially with an air fryer, you want to check how quickly it is cooking as some models cook faster than others, so keep an eye on them from this point on.


5. As the chicken cooks, start on the waffles. If the chicken finishes before the waffle, just leave them in the air fryer to keep them warm.


Waffle

6. Spray your waffle iron with cooking spray and heat it on medium-high (if yours has a temperature gauge) as you prepare the ingredients.


7. Mix all ingredients together.


8. When the waffle iron is ready, add the mixture and cook until the waffle iron says it’s done. If using a mini waffle iron, you will need to do 2 (or more) batches.


Sauce

9. Mix the sauce ingredients in a small bowl until homogenous. If too thick, add a little water.


10. Serve with the chicken strips on top of the waffles and drizzle with the maple-mustard sauce.




Notes

· You can also use the chicken just as a snack or lunch. Make a sandwich out of them! Or serve them over mashed cauliflower!

· These waffles are versatile! Serve them as the base for some chili or beef stew. Or do what I do and make them for breakfast! I will fry a couple of eggs and some bacon and set the eggs on top of the waffle so the yolk becomes a sauce.

· Change up the spices as you like.

· No waffle iron? No problem! Make “potato pancakes” out of them!
