Ingredients
· 1 1/2 cups almond milk
· 1 Tbsp light butter (I use I Can’t Believe It’s Not Butter Light)
· 2 tsp minced garlic (about 2 cloves)
· 2 Tbsp flour
· 1/2 cup grated parmesan cheese (freshly grated is best)
· Cooking spray
· 1 1/2 cups broccoli florets, cut into small pieces
· 1 to 1 1/2 lb boneless, skinless chicken breasts, cubed (I used 1 1/2 lbs)
· Salt, to taste
· Black pepper, to taste
· 8 oz pasta (I used "regular" Prince spaghetti when creating this dish)
Directions
1. Microwave the almond milk to warm it, about 1 minute. Or heat it just to steaming on the stovetop, then turn off the heat.
2. In saucepan, over medium heat, melt the butter, then stir in diced garlic and cook about 30 seconds.
3. Sprinkle in the flour while whisking continuously to form small, pasty clumps.
4. Add small bits of milk, whisking vigorously to break up the clumps, until all the milk is added. Simmer for 5-6 minutes or until it starts to thicken.
5. Whisk in the parmesan cheese until smooth. Turn the burner down to its lowest setting and cover the sauce to keep it warm as you work on the rest of the dish.
6. Place water in large pot and bring to boil. Generously salt the water and add the pasta, cooking it according to package instructions.
7. While the pasta water heats, coat a large skillet with cooking spray and heat over medium-high heat. Once hot, add the broccoli florets and cook, without stirring, until browned slightly, 1-2 minutes. Stir, add about 1/4 cup water, cover, and cook another 2 minutes. Remove the broccoli from the pan to a bowl.
8. Season the chicken with salt and pepper to taste. Coat the skillet again with cooking spray and, with the heat still on medium-high, add the chicken. Allow to sit for 1 minute before stirring to get some color on the chicken. Cook the chicken through, about 5-6 minutes.
9. Add the broccoli back to the skillet, then pour over the alfredo sauce. Toss to combine, then add in the pasta and toss to coat. Salt and pepper to taste.
