Roy’s Light Cheesy Grits

Ingredients

· 2 1/2 cups low-sodium chicken broth or water

· 2 tablespoons light butter

· 1/2 teaspoon salt

· 2/3 cup old-fashioned grits

· 1/2 teaspoon black pepper

· 1/2 teaspoon garlic powder

· 2/3 cup shredded reduced fat-cheddar cheese (see notes)


Directions

1. Bring broth, butter, and salt to a boil in a small saucepan over medium-high heat. While whisking the boiling broth, gradually pour in the grits.


2. Cover the pot, turn the heat to low to keep it at a simmer, and cook the grits according to package directions. I like to whisk once or twice during cooking to prevent the grits from sticking to the bottom of the pan.


3. When grits are done to your desired consistency (see notes) whisk in black pepper and garlic powder. Add cheese and stir until blended. Turn off the heat and serve!


Notes

· If you use fat-free cheddar cheese, you can bring the bites/points down to 3!

· You can replace the shredded cheese with 6 wedges of Laughing Cow Cheddar without altering the bites/points, though the flavor may be more subtle.

· Remember the grits will thicken more once you add the cheese, so you may want to stop the cooking just before it reaches your desired consistency.

· If the grits get too thick, loosen them up with a little more broth or water.
