Ingredients:
· Cooking or baking spray
· 1 cup oatmeal
· 1/2 cup flour (see notes)
· 1/2 cup (60g) walnuts, chopped (see notes)
· 1/4 cup sugar replacement
· 1 teaspoon baking powder
· 1/2 teaspoon cinnamon
· Pinch salt
· 1/3 cup unsweetened applesauce
· 1 egg
· 1/4 tsp vanilla
· 2 medium to medium-large apples
· 1 tsp lemon juice
· 1/4 cup Walden Farms Calorie-Free Caramel Sauce (see notes)
Directions
1. Preheat oven to 350° F. Coat an 8” cake pan with cooking spray. If desired, line the bottom with parchment.
2. In a medium bowl, place the oatmeal, flour, walnuts, sugar replacement, baking powder, cinnamon, and salt, and stir to combine well.
3. In a separate small bowl, whisk together the applesauce, egg, and vanilla. Pour over the oatmeal mixture and combine well, until no flour remains. Set aside.
4. While the oatmeal sits, peel the apples and dice them into 1/2” cubes. Place the first diced apple in a bowl and toss it with the lemon juice, then dice the remaining apple. Toss with the other apple pieces.
5. Add the apples into the cake batter and mix well. It will look like you have too many apples in there, but just mix until the batter is fairly well distributed among the apples. Pour the batter into the cake pan and use a spatula or spoon to level the top.
6. Bake for 20 minutes, until a toothpick inserted in the center comes out clean, but feels slightly tacky. Set on a cooling rack to cool for 5 minutes before turning the cake out onto the cooling rack. Leave it to cool exactly as it comes out of the pan, don’t try to turn it right-side up yet. Once cool, turn onto a plate, right-side up.
7. Pour caramel sauce over cake and place in the refrigerator for 30 minutes. Serve!
Notes
· You can replace the flour with any nut or gluten-free flour you like.
· You can use other nuts in place of the walnuts if you like, but know that the bites, points, calories, and macros may change.
· Feel free to add other spices as desired. Ginger or nutmeg would be great. Or use Apple Pie Spice.
· You can change up the fruit by swapping pears for apples or adding 1 cup of cranberries in place of 1 apple.
· If you can’t find the Walden Farms Caramel Sauce, you can also use Smucker’s Sugar-Free Caramel Sauce (or others). Before adding the Smucker’s (or any thick caramel sauce) add 1 Tbsp of almond milk and microwave it to loosen it up before pouring over the cake.
· This cake can be stored, covered, in the refrigerator for up to a week. You can also freeze it for 3-4 months.
