Roy’s Light BLT Pasta Salad

Ingredients

· 8 ounces Fiber Gourmet pasta, cooked and cooled (other brands may change bites/points)

· 8 slices center-cut or turkey bacon, cooked and diced

· 1/2 cup light mayonnaise (I used Hellman’s—which goes by Best Foods in some areas)

· 1/2 cup plain nonfat Greek yogurt

· 1 Tbsp ranch dressing mix, or to taste

· 1 pint of cherry or grape tomatoes, halved or quartered depending on size

· 1 head of iceberg or romaine lettuce, thinly sliced into ribbons, like cabbage for coleslaw


Instructions

1. In a large bowl, whisk together the mayonnaise, yogurt, and ranch mix.


2. Add the pasta and toss to coat, then add in the tomatoes and bacon and toss to coat. If the dressing is too thick for your liking, add a tablespoon or two of water or almond milk.


3. Toss in all the lettuce just before serving to keep it crisp. If you are eating some now and some more than a day later, you may want to add lettuce only to the portion you will be eating soon or it can get soggy. You can keep the remaining lettuce in a zip-top baggie with a paper towel inside to help keep it crisp until you need it.
