Roy’s Light & Fluffy Biscuits

Makes 6 biscuits 2 Bites / Blue Points per biscuit

Ingredients:

· 1 cup self-rising flour OR 1 cup all-purpose flour, 1 & 1/2 tsp baking powder, 1/2 tsp salt

· 1/4 cup nonfat Greek yogurt

· 2 Tbsp almond milk (plus more for brushing on biscuits - optional, see below)

· 1/4 cup plain seltzer


Directions:

1. Preheat oven to 425. Line a baking sheet with parchment or spray with cooking spray.


2. In a medium bowl or large measuring cup, combine the yogurt and almond milk. Add the seltzer and stir GENTLY with a fork so as not to destroy the bubbles.


3. Add flour to the liquid, folding it GENTLY with a fork until combined into a thick dough.


4. GENTLY remove dough from the bowl to a floured work surface.


5. GENTLY fold the dough over itself 3-4 times until it feels “pillowy." Pat into a round or square about 1-inch thick.


6. Cut dough into 6 triangles, squares, or use a biscuit cutter. Place at least an inch apart on the parchment-lined baking sheet and brush with almond milk, melted light butter, egg wash, or simply spray with spray butter.


7. Place in the oven and bake 15-20 minutes until lightly golden and sounding hollow when tapped.


8. Serve warm, at room temperature, toasted, or reheated in the oven.
