Roy’s Light & Creamy Bananas Foster Oatmeal

Ingredients

· 1/3 cup old-fashioned oatmeal

· 1/3 cup water

· 1/3 cup almond milk

· 1/2 banana, sliced and cut into quarters

· 1 Tbsp brown sugar replacement, or to taste

· 1/4 tsp rum extract

· 1/8 tsp cinnamon

 

Directions

1. In a small saucepan, combine oatmeal and water. Set aside for 30-60 minutes to allow the oatmeal to soak up the water. (see notes)

 

2. Add the almond milk to the saucepan, stir to combine, and set it over medium heat. Cook until the milk boils and allow to cook until most of the almond milk is gone and the oatmeal is loose but thick, about 5 minutes. Turn off the heat.

 

3. Stir in the brown sugar replacement, rum extract, and cinnamon. Mix to melt the sugar, then stir in the banana. Let warm through 1 minute. Pour into a bowl and enjoy!

 

Notes

· If you’ll be pressed for time in the morning, you can do Step 1 the night before, it just may not be as creamy.

· You can easily adjust the recipe to make more servings! Just multiply ingredients by the number of servings needed.

· Other flavor combinations to try (though bites/points will vary):

o   Caramel Apple Oatmeal – Add half an apple, diced; 1/8 tsp cinnamon; 1 Tbsp Smucker’s Sugar-Free Caramel Sauce (or other brands to taste) after turning off the heat.

o   Maple Pumpkin Oatmeal – Add 1/4 cup pumpkin puree; 1/4 tsp pumpkin pie spice; 2 Tbsp sugar-free maple syrup after turning off the heat.

o   Lemon-Blueberry Oatmeal – Add 1 Tbsp lemon juice to the water you soak the oats in. Stir in 1 tsp lemon zest and 1/4 cup blueberries after turning off the heat.

o   Orange-Walnut Oatmeal – Add 1 Tbsp orange juice to the water you soak the oats in. Stir in 1 tsp of orange zest and 1 Tbsp chopped walnuts after turning off the heat.

o   Chocolate-Strawberry Oatmeal – Add 1/4 cup diced strawberries and 1 Tbsp sugar-free chocolate chips after turning off the heat.

o   Chocolate-Peanut Butter Oatmeal – Add 2 Tbsp powdered peanut butter, 1 Tbsp sugar-free maple syrup, and 1 Tbsp sugar-free chocolate chips after turning off the heat.

o   Experiment with YOUR favorite flavors!
