Roy’s Light Banana (or Any Fruit!) Custard French Toast

Ingredients

· 2 slices low-cal bread

· 1 small banana (or fruit of your choice)

· 2 eggs

· 2 Tbsp almond milk

· 1 Tbsp sugar replacement

· 1/2 tsp vanilla extract

· Cooking spray

 

Directions

1. Cut out the center of the bread slices, close to the crust but keeping the crust intact. Set the crust and interiors aside.

 

2. Slice the banana width-wise into 18 slices. Set aside.

 

3. In a liquid measuring cup with a spout, whisk the eggs, almond milk, sugar replacement, and vanilla. Set aside.

 

4. Heat a large skillet over medium heat and coat with cooking spray. Lay the crusts into the skillet. Lay out 9 banana slices in the center of each crust square. It’s fine if they overlap. Slowly pour half of the egg mixture over the bananas in each crust, trying to keep it from seeping out of the center. Lay the interior piece of the bread slice back in the center of the crust, pressing it down lightly into the egg mixture. Pour the remaining egg mixture over the top of the bread.

 

5. Cook until the bananas are lightly browned and the egg custard has set, about 3 minutes. Using a large spatula that will support the bread and custard, flip and cook until the other side is browned, another 2-3 minutes. Serve immediately.
