Roy’s Light Bacon-Wrapped Chicken Meatloaf

INGREDIENTS

· Cooking spray

· 1 lb ground chicken breast

· 5-6 slices center-cut bacon

· 1 small onion, diced

· 2 roasted red peppers, finely diced

· 1 tablespoon garlic, minced

· 2 Tbsp roughly chopped fresh parsley OR 2 tsp dried parsley

· 2 tsp dried mint

· 1 tsp dried thyme

· 20 slices of turkey pepperoni, cut into small pieces

· 1/3 cup bread crumbs

· Salt and Pepper to taste

· 2 eggs, slightly beaten


INSTRUCTIONS

1. Preheat oven to 375°F. Line a small baking sheet with foil, parchment, or a silicone mat. Line an 8x4 loaf pan with plastic wrap to make removal of the meatloaf easier, spray lightly with cooking spray, then lay the bacon slices across the 4” width without overlapping too much.


2. Spray a small sauté pan with cooking spray and heat over medium-high. Once the pan is hot, add the onion and cook a few minutes before adding the minced peppers, parsley, mint, and thyme. Cook until onions are light golden brown. Add the garlic and cook until fragrant, about 30 seconds. Set aside and let cool a few minutes.


3. In a medium bowl, add the ground chicken, pepperoni, bread crumbs, salt, and pepper. Mix well, then add eggs and the cooled onion mixture. Make sure everything is well incorporated and blended.


4. Cover the bacon in the loaf pan with the ground chicken mixture and press it down. Using the plastic wrap, fold any bacon ends onto the chicken mixture, pressing the mixture more firmly into the pan.


5. Flip the loaf onto the prepared baking sheet and bake about 45 minutes, until it reaches 160° F in the middle of the loaf. Check after 30 minutes to see where it is.


6. Allow the meatloaf to set a few minutes after removing it from the oven, then cut into 6 slices and serve.



Note:

If the bacon is not brown enough for your liking by the time the chicken is done, turn on the broiler for a few minutes to darken it. Just be sure to keep your eye on it! It can burn easily!
