Roy’s Light Apple Oatmeal Bars

Ingredients

· Baking spray

· 2 small apples or 1 large, peeled and diced

· 1 Tbsp lemon juice

· 2 cups old-fashioned oats

· 1/3 cup dried currants, optional, see notes

· 1/2 cup hot water

· 1/2 cup nonfat Greek yogurt, room temperature

· 3 eggs, lightly beaten, room temperature

· 1/4 cup brown sugar replacement, see notes

· 2 tablespoons unsweetened applesauce

· 1 tsp vanilla

· 1/2 tsp cinnamon


Directions

1. Preheat the oven to 375 °F. Spray a 9x13 pan or quarter sheet pan with baking spray. Line the pan with parchment if desired for easier removal.


2. Place the diced apples in a medium bowl and toss with lemon juice to coat. Set aside.


3. In a large bowl, combine the oats and currants. Pour the hot water over the oat/fruit mixture, stir to moisten the mixture, and let sit for 2 minutes.


4. Add in the yogurt, eggs, brown sugar replacement, applesauce, vanilla, and cinnamon. Stir to combine thoroughly.


5. Add in the apples and stir to fully incorporate them.


6. Spread into the prepared pan and bake 40 minutes, turning hallway through.


7. Remove from the oven and allow to cool on a rack for at least 15 minutes before turning out of the pan and allowing to cool on the rack.


8. Cut into 12 bars and serve.


Notes

· Currants are optional. They can also be replaced with raisins, Craisins, or other dried fruits. Or even chopped nuts. Changes may affect bites, points, calories, or macros.

· You can use granulated instead of brown sugar replacement, but bars may be a little drier.
