Ingredients
· Cooking spray
Topping:
· 1/2 cup all-purpose flour
· 1/3 cup packed brown sugar replacement
· 1/3 cup granulated sugar replacement
· 1/3 cup rolled oats
· 1/2 tsp ground cinnamon
· Pinch of salt
· 3 Tbsp light butter, melted and cooled
Apple Layer:
· 2 baking apples, such as Granny Smith or Gala, peeled and diced
· 1/4 cup brown sugar replacement
· 1 tsp ground cinnamon
· 1/4 tsp nutmeg
· 1/8 tsp allspice
· Pinch of salt
Cake:
· 3/4 cup all-purpose flour
· 1/3 cup granulated sugar replacement
· 1 tsp baking powder
· 1 tsp baking soda
· 1/2 tsp ground cinnamon
· 1/8 tsp nutmeg
· 1/2 tsp salt
· 1/3 cup almond milk
· 1/3 cup unsweetened applesauce
· 1 large egg
Instructions
1. Preheat oven to 375. Spray a 9”x9” pan with cooking spray.
2. In a medium bowl, make the topping. Whisk together the flour, both sugar replacements, cinnamon, and salt until homogenous. Stir in the oats, then add the melted butter and stir until crumbs are formed. If it gets too clumpy, break it up with your hands. Set aside.
3. In another bowl, prepare the apple layer. Toss the diced apples with the brown sugar replacement, cinnamon, nutmeg, allspice, and salt. Set aside.
4. In another medium bowl, make the cake. Whisk together flour, sugar replacement, baking powder, baking soda, cinnamon, nutmeg, and salt. Add the milk, applesauce, and egg and whisk just until smooth. Do not over-mix.
5. Pour the cake batter into the prepared pan (it will be a thin layer!). Pour the apples evenly over the cake layer. Sprinkle the topping evenly over the apple layer, pressing it down gently.
6. Bake for 30 to 35 minutes or until the topping is golden brown and a toothpick inserted has a few moist crumbs attached.
7. Let the cake cool completely in the pan, about 1 hour. Transfer onto a serving plate or stand. Slice into 6 servings.
8. Keep in a covered container for up to 4 days.
